Sweet Potatoes: Purple

$4.49

1.5 lbs

This purple sweet potato has a rich, almost winey flavor but is denser and drier than regular sweet potatoes.

Description: The purple potato's lovely purple shade is completely natural; the color comes from the same pigment that makes cherries and strawberries red. It has a rich, almost winey flavor but is denser and drier than regular sweet potatoes. The key to cooking these potatoes is to bake it for longer than regular sweet potatoes, and at moderate heat, about 90 to 120 minutes at 350 degrees, at which point it becomes pleasingly moist.

Recipe: Check out this recipe for Purple Sweet Potato Ice Cream! Kids are going to love making it. The result: a healthy snack.

Nutrition: Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid, and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2, and phosphorus.

Storage: Store in a cool, dry place.

Honey Brook Harvest Collective

Located in Honey Brook, PA the Harvest Collective is a group of farmers that all grow and contribute to our food system we're working hard to develop. Initially, we first met Reuben Riehl in the fall of 2012 and began talking about this crazy idea of him supplying the CSA. Now, two and a half years later, Reuben and eight of his neighbors are growing crops, making cheese, and raising chickens, beef, pork, duck, and lamb for the CSA. The group is only open to growers that care greatly for their land and take pride in their natural growing methods. While they are not certified organic, they do everything in their power to raise their crops and animals in the healthiest way possible.
