style/family: Spanish Grass-lands - Inspired by the flavors of a Zamorano, but with a mix of our farmstead milk from both milking herds.
Rind development/treatment: Red waxed rind
Cheese Size/weight: Each wheel is 4.5-6 pounds in weight
Cheese description/tasting notes: The aroma and intense sweet nutty piquant flavor that’s long-lasting on the palate makes this cheese take center stage! The heavy blend of our sweet cow's milk blended with our newly freshened sheep's milk makes this a unique take on a PDO classic. Breath in the aromas, and get lost in the grasslands of Spain, surrounded by fresh spring flowers in the meadows and a flute playing lightly in the background.

This cheese is made from raw Cow & Sheep's milk and has been aged for at least 6 months.
Storage: Rewrap every few days. Make sure you keep the cheese protected from the refrigerator air.
