Description: Pastured, antibiotic & hormone locally raised lamb. Lamb rib chops are cut from the "rack of lamb," the top part of the back attached to the ribs, and have incredibly tender meat. Often the chops are French trimmed, where the meat nearest the ends of the rib bones is scraped away, making for a more elegant presentation. This item comes with 2-4 chops. 

The average weight is .55 lbs. The price per lb is $22.99 and the average cut (.55 lbs) is $12.64 (listed in the short description). On the day of delivery, our team will select a cut of meat from the designated weight range and charge you accordingly.

Storage: Keep frozen until ready to prepare. Thaw overnight in the refrigerator, once thawed, keep refrigerated and use within 2-3 days.

Gobblers Ridge Farm

Located in New Providence, and run by run by Katie and Henry Esch, Gobblers Ridge lambs are grassfed and grass finished. These animals have constant access to pasture and are never fed grain. In the winter months and dry seasons they feed on foraged grasses in the form of dried hay, baleage and silage. The farmers oversee the breeding and feeding of their animals from birth to slaughter.
