This is a raw milk cheese that has been aged for at least 60 days.

Description: A cold water wash before molding gives this cheese a smooth, creamy texture. Surprise your tastebuds by pairing it with a gingersnap! Bet you can’t eat just one.

Storage: Keep refrigerated and sealed from refrigerator air. Rewrap every few days to maintain freshness. When ready to eat let come to room temp and enjoy!

Hidden Hills Dairy

Hidden Hills produces some delicious cheeses that are being used in restaurants throughout Philadelphia including Old Gold on Pizzeria Beddia's pies and Ari Miller uses Buttercup on his Friz Wit served monthly at Garage. These cheeses are used on the best pizza in America and what was named best cheesesteak in Philly, of course they're delicious! All of Hidden Hills' cheeses begin with fresh milk from their own herd Jersey cows they raise. From April through October, the cows enjoy the wide open spaces and superb nutrition made possible by intensive grazing. During the winter months, the ration is based on our own home grown grass and alfalfa hay. They do not feed any fermented feeds or use rbst. The quality of their cheese begins with quality milk from contented, stress free cows. The cheeses are produced on the farm in their licensed cheese plant. Currently, all of their cheeses are made with raw milk. As such they are required to age them for a minimum of sixty days. (Research has determined that cheeses aged for 60 days will not contain harmful pathogens.) The milk is tested routinely and meets all of the standards set for licensing requirements. Small batches and careful processing create a flavorful cheese that we can offer with pride.
