This is a raw milk cheese that has been aged for at least 60 days.

Description: The newest batches of Hickory on the Hill washed in ReAnimators coffee and aged for 6 months in Doe Run's caves. These batches are made in line with a traditional Appenzeller recipe, but they toned down the salt just a fraction of a hair to let this November milk shine bright. Aromatic, supple, and just a piece of pure joy. Add some love, coffee and cheese to your day with this delicious choice! The Hickory on the Hill is an Appenzeller style washed with a creative local seasonal wash. Sam and Matt wash these 12-16 pound wheels daily by hand for 3 months while aging to develop this one-of- a-kind washed rind with a smooth paste and some beautiful eyes!
Storage: Rewrap every few days. Make sure you keep the cheese protected from the refrigerator air.
