This is a raw milk cheese that has been aged for at least 60 days.

Description:
Hard, appenzeller style w. natural washed rind. This cow's milk alpine style cheese that seasonally features different rind washes. For several months, these washes develop an aromatic smear rind before letting the natural flora take hold. The result is an experience of sweet toasted nuts, umami, & a little funk. This batch was been washed in a plain brine solution.

Storage: Rewrap every few days. Make sure you keep the cheese protected from the refrigerator air.
