Metropolitan Bakery

At Metropolitan Bakery it all begins with a natural starter. Wild yeasts are allowed to feed on a diet of flour, water and catalysts such as mashed bananas, raisins or Concord grapes until the mixture becomes the bubbly, sour-smelling starter called the "chef" two weeks later. Over the next two days, dough will be mixed, hand-shaped and signed, before being left to rise in rye-dusted wicker baskets in cool, dark rooms. Only after this "long-slow-cool" process are the loaves ready to be baked in steam-injected, stone-deck Bongard ovens and ultimately delivered to Metropolitan shops and Philly's best restaurants.
