This cheese is made from pasteurized Cow, Sheep & Goat's milk cheese

 Bold rounded out flavor of the high fat of Doe Run's farmstead sheep's milk along with a nice earthy tone from the addition of our goat's milk.

Tasting notes: Lactic and creamy like Dragonfly or a beautiful Neufchatel style of cheese with a rounded lusty sheep milk note and flavor topped off with a light and airy Geo rind with a precise French wrinkle that makes these rounds visually appealing. The mouthfeel is like biting a cloud with a high-fat content, with a rich rounded out flavor of sweet cream transformed into sweet grass and honey. This cheese encompasses the high pasture season and is a perfect representation of Doe Run's three milking herds. 

Storage: Rewrap every few days. Make sure you keep the cheese protected from the refrigerator air.
