Spanish style cheese inspired by the flavors of a Hispanico, but with a mix of Doe Run's farmstead milk from all three milking herds.

Cheese style/family: Spanish Style - Inspired by the flavors of a Hispanico, but with a mix of our farmstead milk from all three milking herds.
Rind development/treatment: Black waxed rind
Cheese description/tasting notes: Spanish inspired, we have harvested a nice piquant in our farmstead mixed milk batches. The main flavor profile goes towards a well rounded out flavor of grass and clean cream finished with a perfect light spice. This firm cheese is semi-mild, yet tasty and aromatic. It pairs well with Spanish red wines and cured meats.
This cheese is made from Raw Cow, Goat & Sheep's milk and has been aged for at least 6 months.
Storage: Rewrap every few days. Make sure you keep the cheese protected from the refrigerator air.
