Description: Castle Valley Mills Spelt flour is a ancestor to modern wheat varieties and has a bolder flavor and better nutritional profile than conventional wheats. Spelt is an excellent all-purpose flour. It is also the flour used in Pennsylvania Dutch recipes. This ancient grain has a rich nuttiness when milled into four, and can be substituted for whole what flour in most recipes. The moderate gluten and good protein content makes great artisan breads. Try it in your pizza crusts, flat breads,or morning pancakes!
