Description: This is a pasteurized sheeps milk cheese.
Goot Essa Emanuel Vom Tal Kase is a gourmet, pasteurized sheep milk bloomy rind cheese. Aged for 60 days, this all-natural, hand-made, cheese has the deep, rich flavor and complexity of sheep milk. The locally produced milk is made into cheese in their cheese shop using a traditional German-Swiss recipe which was originally used when cheese needed to be made in a hurry. The flavor profile runs to salted cream with hints of grass in both taste and aroma. The supple, edible rind imparts a subtle mushroom taste. Emanuel Vom Tal Kase adds new taste dimensions to lettuce salads. It is great baked and on French bread or warm toasted bread squares.  Flavor enhancers include dried and glazed fruits like pears, cherries and figs, fresh grapes, and almond slivers. This cheese is excellent on a cheese board, either as an appetizer or dessert, as well as on the charcuterie. Emanuel Vom Tal Kase pairs well with a wide range of whites, from sparkling wines to semi-sweet Riesling and with less intense red wines. Recommended beers include Saison, Schwarzbier, Porter and pilsners.

Storage: Shelf life 4 weeks. Once opened, rewrap every fews days to maintain freshness. 

Goot Essa

Goot Essa began in 2001 with a group of Amish dairy farmers who worked together to produce high quality cheese with some of their milk. Their goal then, as now, was to use their cheese-making expertise to provide enough extra income to keep their families on the farm. They have chosen to work their fields in the traditional way, with horse and manpower instead of machines. This means that their farms will be small, but each acre and each animal is cared for with love and the respect of nature because theirs are true family farms. Their goal is to offer food products made from the freshest, highest quality, all-natural ingredients. They make it all by hand, in small quantities, giving each one their individual attention. In the Pennsylvania Dutch dialect, “Goot Essa” means “good food” or “good eating.” It seems only natural to name their group Goot Essa, because they want you to share in their love of hand-made, good old-fashioned food—food with all the subtlety that means slowly aged and gourmet. Goot Essa, because they want you to share their love of recipes passed down over hundreds of years. That is their story—pride in the past, with hope for the future—Goot Essa.
