Description:
A firm manchego style with a complex blend of earth, grass and grape undertones. A firm cheese, yet offers and unexpectedly smooth texture. Goot Essa Felsa Yehr is the Amish interpretation of a cave-aged Manchego-style cheese and is one of their signature, gourmet cheeses. This all natural, sheep milk cheese is hand-made and stored exclusively in their cave for 18 months, with the 5 lb wheels being continually turned by hand. This is a hard, dense cheese with an unexpectedly smooth texture and a dark paste. The flavor is a complex blend of earth and grass with subtle grape undertones. The flavor is intense, but with a clean, smooth finish. Felsa Yehr is made for a cheese board and balances many sweet and spicy foods on the charcuterie board. As an appetizer, it goes well on a French bread or on warm wedge of toast. This farm stead cheese demands a spicy mustard or tangy red beets along with fresh grapes and quince paste. It pairs well with crisp, dry white wines and a wide range of intense red wines. Felsa Yehr also is the perfect “to go with” for all heavier brews and hard cider. This cheese is made for easy entertaining: just put out a wheel of Felsa Yehr, your favorite beverage, and a cheese knife, and let your guests help themselves.

Storage: Shelf life 4 months. Once opened, rewrap every fews days to maintain freshness. 

Goot Essa

Goot Essa began in 2001 with a group of Amish dairy farmers who worked together to produce high quality cheese with some of their milk. Their goal then, as now, was to use their cheese-making expertise to provide enough extra income to keep their families on the farm. They have chosen to work their fields in the traditional way, with horse and manpower instead of machines. This means that their farms will be small, but each acre and each animal is cared for with love and the respect of nature because theirs are true family farms. Their goal is to offer food products made from the freshest, highest quality, all-natural ingredients. They make it all by hand, in small quantities, giving each one their individual attention. In the Pennsylvania Dutch dialect, “Goot Essa” means “good food” or “good eating.” It seems only natural to name their group Goot Essa, because they want you to share in their love of hand-made, good old-fashioned food—food with all the subtlety that means slowly aged and gourmet. Goot Essa, because they want you to share their love of recipes passed down over hundreds of years. That is their story—pride in the past, with hope for the future—Goot Essa.
