Description: This is a pasteurized cows milk cheese.
Aged for 12 months, Goot Essa Savory Oregano Cheddar is a farmstead, all-naturally produced cow milk cheddar cheese infused with oregano to add a bit of piquant. The added oregano produces a uniquely Italian flavor seldom found in cheddar cheeses. The texture is medium-bodied, semi-hard yet with a smooth mouth feel. Often used in pizzas and Italian pastas, it is best when accompanied by heirloom tomato slices, lemon-infused salads, chilled lamb sandwiches, and smoked trout. This pairs best with dry, fruity white wines and full fleshy fruity reds such as Australian Shiraz and red Zinfandel. Savory Oregano Cheddar also compliments Belgian-style Saison, Witbier and American Pale Ale.

Storage: Shelf life 3 months. Once opened, rewrap every fews days to maintain freshness. 

Goot Essa

Goot Essa began in 2001 with a group of Amish dairy farmers who worked together to produce high quality cheese with some of their milk. Their goal then, as now, was to use their cheese-making expertise to provide enough extra income to keep their families on the farm. They have chosen to work their fields in the traditional way, with horse and manpower instead of machines. This means that their farms will be small, but each acre and each animal is cared for with love and the respect of nature because theirs are true family farms. Their goal is to offer food products made from the freshest, highest quality, all-natural ingredients. They make it all by hand, in small quantities, giving each one their individual attention. In the Pennsylvania Dutch dialect, “Goot Essa” means “good food” or “good eating.” It seems only natural to name their group Goot Essa, because they want you to share in their love of hand-made, good old-fashioned food—food with all the subtlety that means slowly aged and gourmet. Goot Essa, because they want you to share their love of recipes passed down over hundreds of years. That is their story—pride in the past, with hope for the future—Goot Essa.
