Description: Goot Essa Garden Pepper Jack is an all-natural, hand-made washed curd raw cow milk cheese with pieces of cayenne and jalapeño peppers mixed in. This cheese has a peppery bite and piquancy tempered by a creamy taste and a smooth, semi-soft texture. This is a new recipe developed by Israel, our famous Amish cheese maker, and has found great favor among hot pepper fans. We produce this cheese in 40 lb blocks and age it for 8 months over which time the intensity of the peppers increases. Sweet and Spicy Mustard as well as the Tangy Pickled Red Beets add dimension to the taste and slightly modify the intensity of the chile pepper pieces. This cheese cooks well in pizza tacos, melts well on burgers and buffalo chicken wings. This cheese goes great with green onions, sour fruits, and sesame seed crackers. This cheese demands both a wine and a beer that can stand up well against hot peppers. Garden Pepper Jack pairs with sweet to demi sec whites such as Hof Riesling and white zinfandel as well as light fruity red wines. Brews include blonde ale, amber ale, winter warmers, a malty beer, and many popular craft brews.

Storage: Shelf life 4 months. Once opened, rewrap every fews days to maintain freshness. 

Goot Essa

Goot Essa began in 2001 with a group of Amish dairy farmers who worked together to produce high quality cheese with some of their milk. Their goal then, as now, was to use their cheese-making expertise to provide enough extra income to keep their families on the farm. They have chosen to work their fields in the traditional way, with horse and manpower instead of machines. This means that their farms will be small, but each acre and each animal is cared for with love and the respect of nature because theirs are true family farms. Their goal is to offer food products made from the freshest, highest quality, all-natural ingredients. They make it all by hand, in small quantities, giving each one their individual attention. In the Pennsylvania Dutch dialect, “Goot Essa” means “good food” or “good eating.” It seems only natural to name their group Goot Essa, because they want you to share in their love of hand-made, good old-fashioned food—food with all the subtlety that means slowly aged and gourmet. Goot Essa, because they want you to share their love of recipes passed down over hundreds of years. That is their story—pride in the past, with hope for the future—Goot Essa.
