Chocolate Bar: Salt & Thai Pepper

Description: Unique & satisfying, it’s made with 73% dark single-origin Vietnam chocolate, and topped with fragrant Thai Long Peppercorns & local Salty Acres LLC sea salt. A play on the ubiquitous combination of salt & pepper, their Sea Salt & Thai Pepper bar is seasoned with Thai Long Peppercorns which impart a complex, earthy flavor with a lingering subtle sweetness, and with sea salt hand-harvested from the Atlantic Ocean by Salty Acres in Cape May, NJ.

The chocolate is made with cocoa beans from the province of Ben Tre, Vietnam. The cacao from this region lends notes of molasses and spice cake that compliment the warm earthiness of the Thai Pepper. Ben Tre is located in the Mekong Delta which provides the region with fresh water, making the low-lying land particularly fertile. It is cited as the birthplace of cacao in Vietnam.

They craft cacao beans into finished chocolate using a combination of traditional and modern techniques. They source beans from all over the world, paying a premium to farmers. In their chocolate cafe, they showcase their work as an ever-evolving line of chocolate bars, bon bons, and drinking chocolates. They use cacao as a medium to tell stories. It can be traced through history, shaping and connecting cultures to provide a global framework for the chocolate we enjoy today. Through their chocolate making process, they hope to highlight the vital work of the farmers who grow and harvest cacao, and to honor the long tradition of chocolate making here in Philadelphia.
