Description: Seasonally we make our St. Malachi with 80% goat’s milk & 20% cow’s milk. This Alpine & aged Gouda inspired cheese has a smoother paste thanks to the goat’s milk with all of the St. Malachi caramel nutty flavor.

Cheese Type: Hard, Alpine/Aged Gouda w. natural rind
Milk Type: Pasteurized goat & cow’s milk.

Storage: Rewrap every few days. Make sure you keep the cheese protected from the refrigerator air.
