These tender greens will be most flavorful eaten raw in salads, but can also add nutrients and enhance the flavor profile of your next soup or stir fry (just make sure you add them at the end!).

This Hanoi Noodle Soup with chicken, baby tatsoi, and bok choy is a great recipe to use this mix in. Pair with our bok choy, scallions, and fresh garlic for even more flavor. Delicious!

Storage: Keep dry and refrigerated, in a sealed bag or container to prevent wilting. Eat within the week.

Farmed by John Stoltzfus, brother of Stevie Stoltzfus, we might say that John is one of our most skilled farmers. Having studied the techniques of one of our country’s most famous organic farmers, Eliot Coleman, he took it upon himself to master winter green production in an unheated greenhouse. Using several mobile greenhouses, he is able to keep fresh winter greens flowing for longer than most. The accuracy with which he plans makes working with him a pleasure. Several years ago we purchased a quick green harvester for him that made his whole operation efficient enough to lower the price for us, and is one of the largest reasons our greens are as price competitive as they are. Notable for baby greens-known for the BEST spring mix ever to be had!
