Teenage spinach, with 3-5 inch leaves and tender stems. Very versatile. Good for eating raw or stir fried or blanched.

Description: This spinach is a slightly more mature variety that is often used raw for salads or stir fried or blanched. Like all spinach, it is known as a "super food" as it is teeming with iron, potassium, protein, and calcium. In fact, these dark, leafy greens are known as one of the best dietary sources of potassium! Cooking spinach is quite flavorful and can be roasted, sautéed or steamed with your favorite spices as the perfect side dish to any meal.

Recipe: Try it simply with olive oil and garlic as in this recipe for a simple side dish.

Storage: Loosely wrap leaves in a damp paper towel, place in a place bag, refrigerate, and enjoy within 3-4 days of pickup.

Farmed by John Stoltzfus, brother of Stevie Stoltzfus, we might say that John is one of our most skilled farmers. Having studied the techniques of one of our country’s most famous organic farmers, Eliot Coleman, he took it upon himself to master winter green production in an unheated greenhouse. Using several mobile greenhouses, he is able to keep fresh winter greens flowing for longer than most. The accuracy with which he plans makes working with him a pleasure. Several years ago we purchased a quick green harvester for him that made his whole operation efficient enough to lower the price for us, and is one of the largest reasons our greens are as price competitive as they are. Notable for baby greens-known for the BEST spring mix ever to be had!
